This course dives into the factors influencing our dietary choices, from cultural influences to personal tastes. We’ll explore macronutrients, micronutrients, governmental dietary guidelines, and practical assessment tools to design nutrition plans that improve well-being and weight management.



There are many factors that influence the way that one selects, prepares, and consumes food. Some of those factors include culture, personal preference, food availability and accessibility of certain foods.
Macronutrients include lipids, carbohydrates and protein. Each one is needed in our diet in various amounts and each one serves an important purpose. There are a variety of foods that provide each of these macronutrients.
Micronutrients include vitamins and minerals. Additionally, vitamins can be divided into water soluble and fat soluble vitamins whereas minerals can be classified as trace and major. Each one serves a specific purpose and if not consumed in appropriate amounts can cause deficiencies or toxicities.
There are multiple governmental agency guidelines and publications to help individuals consume a healthy diet. Some of these recommendations come from the United States Department of Agriculture as in MyPlate, as well as guidelines to monitor food safety and nutrition labels.
There are a variety of assessments used in nutrition to help ensure adequacy of diet and overall predictors of health. These can be individual, and population based. Some of these assessments include body mass index, lean versus fat body mass and for the community can include the incidence or prevalence of certain nutrition related health outcomes.
There are several ways to calculate the needs for an individual to stay healthy. It’s important to understand their energy needs, physical activity needs, hydration needs and various stages in the lifespan (such as pregnancy) that may require additional nutrient needs.
Nutrients go through a series of steps beginning with chewing. Follow that process throughout the entire gastrointestinal cycle, learning where certain nutrients are utilized.
There are numerous lifestyle strategies to help ensure one maintains a healthy weight throughout their lifespan.
